This custom decaf lot is made up of coffees from two different farms/mills, not far from Antigua's main center, which rests in the long shadow of nearby Acatenango volcano. We buy nearly half our Guatemalan coffees from farms around Antigua. But this reach has expanded to several of the outlying areas too, and includes some coffees from the nearby town of San Martin Jilotepeque that are folded in this custom decaf blend. The other coffee is from a family farm in Antigua called "Santa Ines". The altitude of these farms range from 1500 to 1900 meters above sea level, and planted in a mix of cultivars, including Bourbon, Caturra, Catuaí, and Typica. We bought enough of these single origin coffees to sell as non-decaf and to send some off for decaffeination at Swiss Water decaf in Vancouver, Canada. As their name suggests, they use a water-only processing method that removes 99.9% of the caffeine and leaves much of the volatile compounds that affect flavor and aroma intact, so the delicious coffee you send off for decaffeination, comes back a delicious decaf.
