Mexico Chiapas Teopisca SWP Decaf


Overall sweet decaf brew, cocoa powder augmented by a hint of cinnamon-laced raw sugar, chicory note, soft acidity, and chocolatey cup characteristics at the darker end of the roast spectrum.

The Teopisca community is centrally located in the state of Chiapas, Mexico, a highland indigenous community in the highland area of the Sierra Madre de Chiapas. This coffee was purchased through Unión de Cafeticultores del Norte de Chiapas ("UCONOCH" for short), a coffee cooperative that provides farmers with technical assistance and training with a goal of certification in order to obtain a better price for their coffee. There are roughly 2200 coop members, and membership sees about an even split between men and women. Most farmers are growing a mix of coffee cultivars, such as Bourbon, Caturra, Marsallesa, and Typica, and the altitude in Teopisca tops out at 1700 meters above sea level. We sold this coffee as non-decaf as well but reserved a chunk of the lot specifically for decaffeination at the Swiss Water decaf plant in Canada. As their name suggests, Swiss Water uses only water to remove 99.9% of the caffeine from coffee. You can read more about the Swiss Water method here.
