Farm Description:
The El Diamante group are from the small town of the same name, within the Huabal District of Jaén, Cajamarca. This high altitude zone is home to many coffee producers, with farms reaching as high as 1900 meters. This blend is made up of the a hand full of coffee farmers in El Diamante, some of whom we've also purchased individual lots from (like Roger Chilcon). Most are growing a mix of cultivars, like Caturra, Bourbon, Typica and some Catimor. Coffee is processed at home using small depulping machines to remove the outer cherry before fermenting in tanks for around a day and a half. They then wash away the remaining fruit and move the coffee to indoor drying rooms made of wood frames and tarpaulin.
