Farm Description:
Papua New Guinea occupies the Eastern half of the island it shares with the Indonesian province of Irian (no sizable coffee production comes from Irian). There can be a huge range of cups from Papua New Guinea, and the so-called Plantation coffees represent the cleaner character of the coffee produced on the island... more like a good Central American than part of the Indonesian profile. This decaf is a good representation of the balanced flavors you can find in Papua New Guinea, and quite versatile in terms of roast level and brew methods. The lot is comprised of the coffee from many small farms in Goroka, which is part of the very high altitude Eastern Highland region. Coffee grows between 1700 and 2000 meters above sea level, and the farms are typically less than 1 hectare on average. It was decaffeinated by the folks at Swiss Water Decaf in Vancouver, Canada. Their water-only process method removes 99.9% of the caffeine from coffee without any chemical solvents. As far as decaffeination goes, it's one of the gentler processes for the coffee and we find that we get a nice approximation of the non-decaf coffee that we send them.
